Raspberry Almond Smoothie Bowl

 

It's easy to fall into a "food rut", especially after a long cold winter of comfort foods, but this smoothie bowl is the perfect way to switch things up! I typically stick to oatmeal for breakfast during the winter months, but as soon as the temperatures rise, I'm ready for a cool refreshing treat. If you happened to follow my old blog, you may recognize this recipe from a few years ago, but I figured it was good enough to share again here! I used this recipe for inspiration and modified it slightly based on what I already had in my fridge. Also, if you prefer a thicker consistency for your smoothies like I do, then be sure to use all frozen fruit. (I always keep a few frozen bananas in my freezer!)

INGREDIENTS
1 large frozen banana
1 ½ cups frozen raspberries
½ cup unsweetened vanilla almond milk
½ cup ice
2 Tbsp. almond butter
1 Tbsp. honey, plus additional for drizzling
¼ cup granola
2 Tbsp. shredded coconut

PREPARATION
Blend the banana, 1 cup of the raspberries, almond milk, ice, almond butter, and 1 tablespoon of the honey until smooth. Transfer to a bowl and top with the granola, coconut, remaining ½ cup raspberries, and a drizzle of honey.
